The traditional way of making this pasta includes pressing and rolling a small roller over thin strips of pasta to spin it in corkscrew shape. Fusilli pasta also comes in various colours. Asparagus And Peas Fusilli Pasta

  1. Boil 250 gm of fusilli pasta and in the last 2 minutes of cooking, add 300 gm asparagus and 175 gm peas to the pan and boil it together with pasta. The woody ends of the asparagus should be removed and it should be cut into lengths.
  2. Drain the pasta and vegetables and keep a cup of cooking liquid aside.
  3. Add the pasta and vegetables to a pan. Add some lemon zest to it and then add 100 gm of soft cheese with chives.
  4. Add juice of 1/2 lemon and 2-3 tbsp of the cooking liquid that you kept aside to the pasta.
  5. Mix everything well and your pasta is ready to eat.

Sausage Fusilli Pasta

  1. Boil 300 gm of fusilli pasta and cook it. Drain the cooked pasta and keep aside.
  2. In a frying pan, heat 1 tbsp olive oil. Add 8 pork sausages (cut into chunky pieces) to the heated oil and fry until golden brown.
  3. Now add 1 chopped onion and 2 crushed garlic cloves to the pan.
  4. Now add 1 tsp chilli powder, salt to taste and then add 400 gm chopped tomatoes to the pan. Mix the sausages and tomatoes well. Bring the sauce to a boil and bubble it on low flame for 10 minutes.
  5. Add the boiled pasta to the sauce and mix well. Serve hot for best taste.

Sicilian Aubergine, Pine Nut And Raisins Fusilli Pasta

  1. Boil 400 gm of fusilli pasta and cook it. Drain the cooked pasta and keep aside.
  2. In a pan, heat 1/2 tbsp oil. Add 2 sliced garlic cloves, 1 sliced red onion, 1 chopped dried red chilli and handful oregano to the oil and cook until soft.
  3. In another pan, fry 2 diced aubergines in 3-4 tbsp of oil. Once they turn brown, add them to the onions.
  4. Fry 50 gm raisins in 1/2 tbsp of oil until they puff up. Then add them to the aubergines as well.
  5. Now add 4 chopped tomatoes, 2 tsp tomato puree and some more oregano to the aubergines. Cook everything on medium flame for 15-20 minutes.
  6. Lower the flame and add 2 tbsp roughly chopped baby capers and 2-3 tsp red wine vinegar.
  7. Add some water if you think the sauce is too thick and boil it.
  8. Switch off the flame and add pasta to it. Mix well and serve hot with mint and pine nut garnish.

Lazy Summer Fusilli Pasta

  1. Boil 140 gm of fusilli pasta. Drain the cooked pasta and keep aside.
  2. Pre heat the oven at fan 200 C or conventional 220 C or gas 7.
  3. In an ovenproof dish, add 1 onion (cut into wedges), 3 unpeeled garlic cloves and 2 courgettes (cut into chunks) and season properly with olive oil. Roast them for 15 minutes in the pre heated oven.
  4. After 15 minutes, add 250 gm of cherry tomatoes to the dish and roast the vegetables again for 15 minutes.
  5. Take out the roasted vegetables. Remove the skin of garlic and crush it. Mix the vegetables together.
  6. Add boiled pasta to the dish and mix well with the sauce. Garnish with Parmesan and serve hot.

Green Spinach Sauce Fusilli

  1. Boil 400 gm of fusilli pasta and cook it. Drain the cooked pasta and keep aside.
  2. Add 110 gm spinach to a food processor along with 250 gm mascarpone, 1 garlic, 30 gm grated Parmesan and 1/2 lemon's juice. Process into smooth sauce.
  3. Put a pan on low flame and add boiled pasta and the sauce to it. Add around 110 gm of spinach again and 55 gm of pine nuts. Cook until the spinach is wilted.
  4. Mix everything well. Garnish with Parmesan and serve hot

Pro tip: While trying out fusilli pasta recipes, make sure that the pasta is cooked properly. Fusilli is twisted and hence it is quite thick so it takes about 8-10 minutes to boil. Mini ones boil faster. Using a saucepan to boil pasta will be better, also add little oil to the boiling water so that the pasta doesn't stick. You should check the pasta after boiling it for 8-10 minutes so see if the pasta is firm enough.
