Cheese And Tomato Pasta
- In a pan, heat 1 tbsp oil and saute 1 chopped onion until it turns soft. Then add 2 minced garlic cloves and saute for a minute.
- Add 400 gm diced tomatoes, 1/4 tsp pepper,1/4 tsp sugar, 1/2 oregano and 1/2 tsp basil. Mix well and cook till tomatoes turn mushy and sauce comes to a boil.
- Lower the flame and simmer for 15 minutes. Then add 1 cup cooked pasta and mix well.
- Grease a baking dish and transfer pasta in it. Top with 1/4 cup grated Mozzarella and 1/4 cup grated Parmesan.
- Bake for 10-15 minutes at 375 C. Garnish with basil and serve hot.
Cheesy Bechamel Sauce Pasta
- In a pan, melt 50 gm butter. Add 1/2 tsp butter and saute for a minute. Don't let it turn brown.
- Add 1 cup milk and let it boil. Add 1 chopped capsicum and let the sauce cook for 2 minutes. Then add 1 cup grated Parmesan and cook until the cheese melts. Stir constantly to maintain consistency.
- Add salt, 1/4 tsp black pepper powder and 1/4 tsp oregano. Add 2 cup cooked pasta and mix well. Cook for another 2 minutes.
- Transfer it to a greased baking dish and microwave for a minute. Garnish with cheese and basil and serve hot.

Double Cheese Carbonara
- In a bowl, add 100 gm grated Pecorino, 100 gm grated Parmesan, 3 eggs, 7 yolks and some Italian seasoning. Whisk well.
- Take 100 gm pancetta cut into thin slices. Cook it for 5-6 minutes on a non-stick fry pan.
- Add 500 gm cooked spaghetti to the pancetta and mix well. Now add the cheese mixture and and add 1 cup water to get your desired consistency. Cook for about 5 minutes and then serve hot with basil and cheese garnish.
Cheesy Chicken And Broccoli Pasta
- Heat 2 tbsp oil in a large pot. Add 2 chicken breasts cut into 1 inch pieces to the oil. Season the chicken with salt and pepper and cook until it turns brown. Flip and repeat.
- Remove the chicken breasts from oil and transfer into a plate. In the oil left in the pot, add 1/2 chopped onion and 2 minced garlic cloves and saute for a minute.
- Now add cooked chicken back to the pot followed by 2 cup chicken broth, 3 cup water and 450 gm uncooked pasta shells.
- Mix all the ingredients and boil covered. When it starts boiling, remove the lid and simmer for 20 minutes.
- Now add 4 cups broccoli and stir well. Cook uncovered till the water evaporates.
- Then add 1 cup milk and 2 cups grated Cheddar cheese and mix well with the cheese and pasta. Cook well until the cheese melts and you get a creamy sauce.
- Add salt and black pepper to taste and 1/2 tsp cayenne powder and 1/4 tsp nutmeg powder. Mix well. Garnish with basil and serve hot.
